Lychee is a rare sub tropical fruit which has been cultivated in South China for thousands of years. In Chinese culture it's famed as "the King of Fruits"The Chinese consider the lychee, which is a red, heart-shaped fruit, to be a symbol of romance and love.
From early June, clusters of the red oval to rounded heart-shaped fruit with the bumpy skin start to appear on the street stalls and in supermarkets. When choosing lychee, look for bright red skin with little to no greenish hue. There are varieties available in pinkish hues but strawberry red is the most predominant color.
Once you peel off the skin, the crisp juicy flesh of a lychee fruit is white or pinkish, translucent and glossy like the consistency of a grape, but with a sweeter taste. I bet few can resist the hard-to-describe freshness of the taste when you put it in your mouth.
